Reintroducing Tres Dragones from Café Granja La Esperanza (CGLE), a brew that has truly captured our attention.

The name "Tres Dragones" originates from a trio of visually striking drying furnaces that resemble dragons, crafted from clay and used in the drying process. CGLE, a family-owned business with a three-generation coffee-growing legacy, demonstrates commitment to quality through careful cultivation, sustainable farming, and modern processing facilities on their farms.

The process begins with the careful hand-picking of coffee cherries, followed by a controlled temperature fermentation period lasting 48 to 50 hours. Subsequently, the coffee undergoes a 48-hour fermentation in a silo at 35°C before transitioning to solar drying for approximately 15 days.

The detailed drying process enhances the sweetness and tropical fruit notes of the coffee, creating an alluring flavor profile.

The resulting brew is a coffee with rich sweetness accompanied by aromas of tropical fruits and berries. Initial flavours of passion fruit and pineapple transition to blueberry and raspberry as the coffee cools, maintaining a juicy texture that promises a delightful coffee experience.
