Manantiales del Frontino, a coffee farm in the renowned Cauca region, has achieved recognition by securing the 12th position in Colombia's 2022 Cup of Excellence competition after four generations of cultivation. Established in 1920, the farm spans 188 hectares, boasting over ten varietals and thriving with wildlife. Nestled in an ideal environment for coffee cultivation—thanks to meltwater from the Cordillera Central Mountain range, high altitudes, and fertile soils—the farm derives its name from numerous springs in the area.

Managed by Andres Felipe Londoño Montoya since 2007, the farm has seen advancements in processing and cultivation methods, resulting in increased radiance in Cauca. The family, engaged in coffee cultivation since 1932, shifted their focus to quality and specialty coffee in 1999. Andres Felipe expanded the varietals to include Red Bourbon, Yellow Bourbon, Maragogype, Gesha, and Caturra.

Valuing the preservation of nature, Andres Felipe emphasizes a harmonious balance between nature and production to produce exceptional coffee. The farm's commitment to protecting surrounding ecosystems contributes to biodiversity in the region.

The meticulous coffee production process involves handpicking cherries, sorting and floating them to eliminate low-quality ones. Fermentation follows and begins with an anaerobic respiration in a sealed tank with a valve for 20hours, releasing CO2 every 40 hours. Following this step is the aerobic fermentation of 48 hours in a dark room. The careful drying process, a combination of sun and mechanical methods, ensures the coffee reaches 12% moisture content.

This coffee is sweet and complex, offering vibrant berry acidity, intense jam-like sweetness, with a complexity that includes nuances of strawberry and raspberry juiciness, along with a flavor resembling cherry liquor. The experience concludes with a long aftertaste of stewed strawberry and subtle cacao notes.
